CHILLI EGGS IN COCONUT MILK

Preparation Method :

  • Peel the eggs.
  • Put the chilli powder, nuts, onion, garlic and oil in a blender or food processor. Work to a paste.
  • Put the paste in a wok or large frying pan. Set over medium heat and cook, stirring, until it browns.
  • Pour in the coconut milk. Add the Laos powder, lemon grass and curry leaves. Bring the mixture to a boil.
  • Put in the eggs, and cook over medium heat, stirring, until the sauce thickens and reduces by about two thirds.

INGREDIENTS

  • 8 hard-boiled eggs
  • 2 teaspoons chilli powder
  • 2 macadamia nuts or blanched almonds
  • 1 medium onion, finely chopped
  • 3 garlic cloves, crushed
  • 2 tablespoons groundnut oil
  • 350 ml medium- thick coconut milk
  • ½ teaspoon Laos powder
  • 1½ stalks lemon grass, finely chopped
  • 3 curry leaves
