Preparation Method :

  • Beat the eggs, four at a time, each four with half the water and half the tamari or shoyu sauce.
  • Halve the chillies lengthways. Core and seed them, and cut into very thin cross ways slices.
  • Heat the oil in a frying pan over low heat. Put in half the onions and chillies, and cook until soft.
  • Pour in one of the egg mixtures. Cook gently, tilting the pan and lifting the edges of the setting omelette so that as much of the mixture as possible reaches the sides and base of the pan. When done, the top of the omelette should be set and the underside golden brown. Ease the omelette on to a warm plate.
  • Cook the second omelette in the same way.
  • Cut each in half for serving.


  • 8 eggs
  • 3 tablespoons water
  • 4 teaspoons tamari or shoyu sauce
  • 4 red or green chillies
  • 4 tablespoons groundnut oil
  • 1 medium onion, finely chopped
