PEANUT AND COCONUT TOPPING FOR RICE

Preparation Method :

  • Put the peanuts in a heavy saucepan, and set over medium heat. Stir until they brown and smell very nutty, about 2 minutes. Tip into a bowl.
  • Mix together all the remaining ingredients apart from the oil.
  • Very lightly grease the frying pan with oil. Set it over very low heat. Put in the coconut mixture. Stir it over low heat about 5 minutes or until it is golden brown.
  • Tip the mixture into the bowl with the peanuts. Cool.

INGREDIENTS

  • 200 grams peanuts
  • 125 grams desiccated coconut
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • 1 medium onion, finely chopped
  • 1 garlic clove, crushed
  • Juice of ½ lemon
  • Cooking oil for greasing
