PUMPKIN AND COCONUT MILK SOUP

Preparation Method :

  • Remove the peel and seeds from the pumpkin. Finely chop the flesh.
  • Put it in a saucepan with the coconut milk, onion, coriander and sea salt.
  • Bring everything to a boil over medium heat. Add the tamari sauce.
  • Cover and simmer until the pumpkin is very soft and can be mashed to a puree, about 30 minutes. Season to taste with the pepper.
  • Pour the soup into four individual bowls, and scatter the spring onions (scallions) over the top.

INGREDIENTS

  • 1.5 kg pumpkin
  • 350 ml coconut milk
  • 1 medium sized onion, finely chopped
  • 2 tablespoons chopped, fresh coriander
  • Pinch of sea salt
  • 2 tablespoons tamari sauce
  • Freshly ground black pepper
  • 4 spring onions, finely chopped
