Preparation Method :

  • Finely chop the spinach, greens or cabbage.
  • Put the nuts and coriander seeds in a blender or food processor. Grind finely. Add the onion, garlic, and water and work the ingredients to a paste.
  • Put the coconut milk in a saucepan with the Ground Ginger,black pepper and curry leaves, and bring it to a boil. Add the almond and coriander paste, and stir. Simmer, uncovered, 2 minutes.
  • Add the green vegetables and simmer, uncovered - spinach 3 minutes, spring greens (collards) 10 minutes, cabbage 5 to 7 minutes or until just tender.


  • 500 grams spring greens or spinach or green cabbage
  • 4 macadamia nuts or blanched almonds
  • 1 teaspoon coriander seeds
  • 1 medium onion, finely chopped
  • 1 garlic clove, finely chopped
  • 2 tablespoons water
  • 750 ml medium-thick coconut milk
  • ½ teaspoon each ground ginger and freshly ground black pepper
  • 2 curry leaves
