FISH CASSEROLE

Preparation Method :

  • Heat the oil in a saucepan large enough to hold all the ingredients.
  • Add the onions and garlic, and sauté gently for 5 minutes. Add the chilies and mix well.
  • Add the squid, mussels, clams, and jumbo shrimp, and stir well.
  • Add the stock, wine, saffron, tomatoes, bay leaf, and sugar.
  • Season with salt and pepper. Cover the pan and simmer gently for 5 minutes.
  • Discard any mussels or clams that do not open.
  • Add the red mullet and sprinkle with the parsley. Simmer for 5 minutes more, then serve at once.
  • Serve with Bruschetta and a green salad.

INGREDIENTS

  • 5 tablespoons Cooking oil
  • 4 red onions, finely diced
  • 4 garlic cloves, crushed
  • 1 teaspoon crushed dried chilies
  • 300 grams squid, cleaned and cut into thin lengths
  • 300 grams mussels, scrubbed and debearded
  • 300 grams clams, cleaned 
  • 500 grams raw jumbo shrimp in their shells
  • 500grams fish stock
  • 500grams dry white wine
  • 2 teaspoon saffron
  • 30 tomatoes, peeled and seeded
  • 4 bay leaves
  • 4 teaspoon sugar
  • 750 grams red mullet fillets, cut into bite-size pieces
  • Italian parsley, chopped
  • Salt and pepper
