Preparation Method :

  • Make 3 slashes across the fish on each side and season with salt and pepper.
  • Place under a preheated very hot broiler and cook on each side for 6-8 minutes or until cooked.
  • To make the salsa Verde, put the parsley, basil, anchovies, capers, and garlic into a food processor or blender and process to a smooth paste.
  • Add the lemon peel and juice, and oil. Season with salt and pepper and blend again.
  • Remove the fish from the broiler and put a spoonful of the salsa Verde into each of the slashes on one side of the fish.
  • Serve the remaining salsa Verde at the table in a small serving dish.


  • 500 grams red mullet, scaled and cleaned
  • Salsa Verde
  • 750 grams chopped Italian parsley
  • 750 grams chopped basil
  • 10 anchovy fillets, roughly chopped
  • 4 tablespoons capers
  • 4 garlic cloves, crushed
  • Peel and juice of 2 lemons 
  • 300 grams Cooking oil
  • Salt and pepper
