Preparation Method :

  • Put the cod, potatoes, tomatoes, onion, and fennel into a large, lightly oiled dish. Try and arrange them in a single layer.
  • Sprinkle with the garlic, olives, capers, and lemon juice, and season with salt and pepper.
  • Drizzle with oil, place in the top of a preheated oven, 450°F and roast for 25 minutes.
  • Garnish with parsley and serve. 


  • 750 grams cod fillets, skinned
  • 8 potatoes, unpeeled and quartered
  • 10 tomatoes, halved
  • 2 red onion, quartered
  • 2 Florence fennel bulb, cut into wedges
  • 4 garlic cloves, crushed 
  • 400 grams pitted black olives 
  • 100 grams pitted green olives
  • 4 tablespoons capers 
  • Juice of 2 lemons
  • 5 tablespoons Cooking oil, plus extra for oiling 
  • Salt and pepper
  • Italian parsley, chopped, to garnish
