Preparation Method :

  • Season the flour with salt and pepper. Dip the lamb chops into the flour to coat evenly.
  • Mix together the Parmesan and bread crumbs in a shallow dish and season with salt and pepper.
  • Dip the cutlets first into the beaten egg and then into the Parmesan mixture to coat all over, pressing the crumbs onto the lamb.
  • Heat the oil in a frying pan. Add the lamb chops and cook on each side for 4 minutes or until golden.
  • Take care when turning them over; a flexible knife is best, so as not to loosen any of the cheesy crust from the chops.
  • Serve immediately with lemon wedges.


  • 500 grams all-purpose flour 
  • 15 lamb chops, trimmed 
  • 200 grams freshly grated Parmesan cheese
  • 200 grams fresh bread crumbs
  • 4 eggs, beaten
  • 4 tablespoons Cooking oil
  • Salt and pepper
  • 2 lemons cut into 4 wedges, to serve
