Preparation Method :

  • Boil the water with a teaspoon of salt. Cook the pasta for 8-10 minutes. Drain and keep it aside.
  • Heat olive oil in a frying pan and add the mushrooms and spring onions. Sauté it until the mushroom turns tender and brown in colour.
  • Now add the garlic, thyme leaves, salt, pepper and white wine. Cook for 5 minutes. (Stir it constantly).
  • Turn off the heat and gently stir in the heavy cream. Add the cooked pasta. Stir it well to mix all the ingredients.
  • While serving, sprinkle the grated cheese and then serve it.
  • Serve with the soured cream.


  • 375 mixed mushrooms (shiitake/crimini/button mushroom) /single mushroom of any type (cleaned and sliced) 
  • 250 grams pasta of any choice (penne/fusilli/fettuccine/spaghetti)
  • 2 cloves garlic (finely chopped)
  • 1 spring onion (chopped)
  • 60 ml dry white wine
  • 30 ml heavy cream
  • 3 tablespoons Cooking oil
  • 2 tablespoons fresh thyme leaves (finely chopped)
  • 2 tablespoons grated feta cheese for garnishing
  • Water for cooking pasta
  • Salt to taste
  • Freshly ground black pepper to taste
