Preparation Method :

  • Put the chicken breasts on a preheated hot griddle pan and cook on each side for five minutes.
  • Blend the garlic, the olive oil, the anchovies,the lemon juice, the mustard, and the egg yolk in a blender.
  • Put the lettuce into a large bowl. Pour in the blended mixture and mix gently.
  • Arrange the lettuce on serving plates and sprinkle with torn basil leaves.
  • Slice the chicken into long lengths and place on top of the lettuce.
  • Shred the parmesan and sprinkle on top of the chicken and serve.


  • 3 boneless, skinless chicken breasts
  • 2 garlic cloves, crushed
  • 200 ml of Cooking oil
  • 4 anchovy fillets, roughly chopped
  • juice of ½ lemon
  • 1 teaspoon of English mustard powder
  • 1 yolk of egg
  • 1 romaine lettuce, torn into pieces
  • A handful of basil, roughly torn
  • 4 slices of ciabatta or white country bread,cubed and fried in oil 
  • 30 grams of Parmesan cheese pepper
