Preparation Method :

  • Heat the oil in a saucepan. Add the Onion, garlic, and eggplants, and saute for 15 minutes.
  • Meanwhile, make the salad dressing. Place all the ingredients in a jar with a lid, season with salt and pepper and shake well. Set aside.
  • Add the tomatoes, anchovies, olives, pine nuts, capers, and parsley to the egg plant mixture and season with salt and Pepper.
  • Pour in the salad dressing, mix well, then let the salad cool before serving.


  • 8 tablespoons Cooking oil
  • 2 onion, chopped
  • 4 garlic cloves, crushed 
  • 4 eggplants, cubed
  • 8 tomatoes, peeled and roughly chopped
  • 8 anchovy fillets, chopped
  • 4 tablespoons pitted black olives
  • 100 grams pine nuts, toasted
  • 4 tablespoons chopped capers
  • Italian parsley, chopped
  • Salt and pepper

Italian Salad Dressing

  • 2 tablespoon white wine vinegar
  • 5 tablespoons olive oil
  • Juice of 1 lemon
  • 2 teaspoon Dijon mustard
