Preparation Method :

  • Arrange the tomato slices in an overlapping circular pattern around a flat serving dish.
  • Sprinkle over the herbs and sugar and season with salt and pepper to taste.
  • Cover the dish loosely with foil and chill in the refrigerator for atleast 30 minutes.
  • Remove the foil and arrange the cheese slices in the centre of the tomatoes. Scatter the olives over.
  • Just before serving, pour over the olive oil and lemon juice. Use fork, gently to lift up the tomato slices so that the oil drains through to them.


  • 425 grams firm ripe tomatoes cut into ¼ in slices
  • 2 tablespoon chopped fresh parsley
  • 2 tablespoon chopped fresh basil 
  • Pinch of sugar
  • Salt and freshly ground black pepper
  • 150 grams Mozzarella cheese cut into ¼ inch slices
  • 3 tablespoon black olives
  • 4 tablespoon Cooking oil 
  • 1teaspoon lemon juice
