LACY EGG SOUP

Preparation Method :

  • Heat the stock to boiling. Mix the other ingredients together and pour into the boiling liquid.
  • Stir for 5 minutes and serve immediately.

INGREDIENTS

  • 1.25 liter stock
  • 2 medium-sized eggs
  • 2 tablespoon semolina
  • 2 tablespoon Pecorino or Parmesan, grated
  • 1 tablespoon finely chopped parsley
  • 1 fresh basil leaf, finely chopped
  • Pinch of salt
  • Pinch of sugar
  • Small pinch of freshly ground nutmeg
