MINESTRONE SOUP

Serves :

Preparation Time :
10 minutes

Cooking Time :
30 minutes

Preparation Method :

  • In a sauce pan, heat the butter and sauté the onion first and then add carrot, cabbage, garlic and zucchini. Cook until the vegetables become tender. (Stir it occasionally).
  • Now add the vegetable stock, tomato puree, basil leaves and spaghetti. Simmer for 10-15 minutes.
  • Add the kidney beans to the pan and heat for 10 minutes.
  • Season the soup with salt and pepper.
  • Serve it after garnishing with cheese and parsley. 

INGREDIENTS

  • 250 grams Kidney Beans
  • 250 grams Tomatoes (pureed)
  • 200 grams Cabbage (shredded)
  • 125 grams Spaghetti 
  • 50 grams parmesan cheese
  • 1 Onion (chopped)
  • 1 Garlic Clove (minced)
  • 1 Carrot (chopped)
  • 1 Zucchini (thinly sliced)
  • 1 litre Vegetarian Broth
  • 2 tablespoons butter 
  • 1 Tablespoon Parsley (chopped)
  • 1 teaspoon Dried Basil leaves
  • Salt to taste
  • Pepper to taste
