SOUP ROMANO

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Heat the oil in a large saucepan and gently sweat the onions, carrots and celery for 5 minutes.
  • Add the tomatoes, mushrooms and stock, bring to the boil and simmer for about 20 minutes.
  • Stir in the cooked bacon, pasta shells, oregano, salt and freshly ground black pepper, and simmer for a further 20 minutes. Serve immediately.

INGREDIENTS

  • 1 tablespoon Cooking oil
  • 1 medium-sized onion, chopped
  • 4 small carrots, sliced
  • 3 stalks celery, sliced
  • 2 large tomatoes, blanched, skinned, seeded and chopped
  • 50 grams mushrooms, chopped
  • 1.5 liter bacon stock
  • 100 grams boiled bacon, chopped
  • 75 grams small pasta shells
  • ½ teaspoon oregano
  • Salt and freshly ground black pepper
