TUSCAN BEAN SOUP

Cooking Time :
40 minutes

Preparation Method :

  • Heat the olive oil in a saucepan. Add the shallots, garlic, bacon, carrot, celery, and red bell pepper and cook, stirring occasionally, for 5 minutes.
  • Add the beans, stock, bay leaf, oregano, and marjoram. Bring to a boil and simmer for 15 minutes. Skim off any scum that may come from the beans.
  • Taste and season well. Finally, just before serving, add the chopped parsley.
  • To serve, ladle into warmed bowls and drizzle each one with a little extra virgin olive oil.

INGREDIENTS

  • 4 tablespoon Cooking oil
  • 8 shallots, chopped
  • 4 garlic cloves, crushed
  • 300 grams diced green bacon
  • 2 carrot, diced
  • 4 celery sticks, diced
  • 1 red bell pepper, cored, seeded and diced
  • 500 grams can borlotti beans, drained and rinsed
  • 2 quart chicken stock
  • 2 bay leaves
  • 2 teaspoon chopped oregano
  • 2 teaspoon chopped marjoram
  • Handful of Italian parsley, chopped
  • Salt and pepper
  • olive oil, to drizzle
