ZUPPA FUNGHI (MUSHROOM SOUP)

Serves :

Preparation Time :
10 minutes

Cooking Time :
35 minutes

Preparation Method :

  • Sauté onion with olive oil in a sauce pan.
  • Add garlic, white and shiitake mushrooms to the sauce pan and cook until nearly tender.
  • Add the tomato paste and stir it well.
  • Pour the beef broth and simmer for 20-25 minutes
  • Add salt and pepper and mix it well.
  • Place the Italian croutons in the serving bowl and then pour the soup.
  • Garnish with parsley.
  • Serve it hot. 

INGREDIENTS

  • 250 grams white mushroom (sliced) 
  • 250 grams shiitake mushroom (stems removed and sliced) 
  • 750 ml hot beef broth 
  • 1 onion (finely chopped) 
  • 1 garlic cloves (minced) 
  • 2 tablespoon Cooking oil
  • 2 tablespoon parsley (chopped)
  • 1 tablespoon tomato paste 
  • 4 Italian crouton pieces
  • Salt to taste
  • Pepper to taste (freshly grounded)
