Preparation Method :

  • Dust the zucchini slices all over with the flour.
  • Heat the oil in a frying pan and fry the zucchini, in batches, for 2 minutes on each side until golden. Remove from the pan and keep warm.
  • When all the zucchini are cooked, pour off the oil from the pan.
  • Add the butter, chilies, garlic, lemon peel and juice, and the olives and heat until the butter is foaming.
  • Pour over the zucchini, season with salt and pepper and toss.
  • Serve immediately.


  • 750 grams zucchini, thickly sliced
  • 300 grams all-purpose flour
  • Cooking oil, for frying
  • 100 grams butter
  • 1 teaspoon crushed dried chilies
  • 4 garlic cloves, crushed
  • Peel and juice of 2 lemons
  • 2 tablespoon green olives, pitted and chopped
  • Salt and pepper
