Preparation Method :

  • To make Basil Pesto: Combine garlic, basil, cheese and oil in a food processor and process for 10 seconds or until mixture forms a paste.
  • Make seasoning mixture by combining salt, pepper and garlic powder.
  • Remove the crust of the bread.
  • Apply the basil pesto on one side of all the bread slices.
  • Place a slice of cheese on bread followed by a layer of zucchini, red bell pepper and tomato.
  • Add another slice of cheese. Sprinkle the seasoning mixture. Place another slice of bread on top of it.
  • Apply butter on both sides of the prepared sandwich and Place bread on grill rack.
  • Grill it for 5-6 minutes until the cheese has melted or top has turned golden brown (turn it once).
  • Repeat the same with remaining vegetables and bread.
  • Serve it hot with tomato ketchup.


  • ½ loaf of Italian bread, sliced lengthwise
  • 2 tablespoons butter
  • 1 tomato (thinly sliced)
  • ½ zucchini (thinly sliced)
  • 1 red bell pepper (cut into 1/2-inch thick slice)
  • 8-12 slices fresh mozzarella cheese
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Basil Pesto 

  • 50 grams basil leaves
  • 20 grams pine nuts (toasted)
  • 2 garlic cloves, peeled
  • 2 tablespoon Cooking oil
  • Salt and pepper as per taste
