Preparation Method :

  • Heat the oil in a frying pan.
  • Fry the aubergine slices.
  • Place all the remaining ingredients and bring it to the boil.
  • Reduce the heat and add the fried aubergine slices.
  • Simmer until the slices are tender.                           
  • Serve it hot.  


  • 1 aubergine / eggplant (thinly sliced)
  • 150 ml water 
  • 60 ml soy sauce
  • 30 grams sugar
  • ½ red chilli (sliced)
  • ¼ tsp yuzu kosho (yuzu pepper)
  • Cooking oil for frying
