Preparation Method :

  • Cut Sweet potatoes into 5mm slices. Boil, steam or microwave Sweet potatoes until just tender; drain on absorbent paper.
  • Toss Sweet potatoes slices in flour; shake away excess flour.
  • Just before serving, dip Sweet potatoes in batter, deep-fry in hot oil in batches until lightly browned; drain on absorbent paper.


  • Sift dry ingredients into bowl, whisk in combined egg, egg yolk and water, whisk until smooth.

Dipping Sauce:

  • Combine all ingredients in bowl; mix well. Serve immediately.



  • 1 kg Sweet potatoes, peeled plain flour
  • Peanut oil for deep-frying


  • 250 grams plain flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 egg yolk
  • 500ml water

Dipping sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon mild sweet chili sauce
  • ¼ teaspoon sesame oil
  • 2 tablespoons water
  • 1 clove garlic, sliced
  • 1 green shallot, sliced
