Preparation Method :

  • Filling: Place the pineapple, strawberries, coconut and mint in a bowl and mix to combine.
  • Warm the tortillas, one at a time, in a dry frying pan over a medium heat for 30 seconds each side or until soft.
  • Place 2 tablespoons of filling to the centre of each tortilla and fold in half to enclose. Press edges together to seal.
  • Heat the oil in a saucepan over a high heat. Hold the tortilla parcels carefully with 2 sets of tongs and deep-fry for about 2 minutes or until golden and crisp.
  • Drain on absorbent kitchen paper, then sprinkle with sugar and serve.


  • 4 flour tortillas
  • Cooking oil for deep-frying
  • Sugar for sprinkling

Fruit and Coconut Filling

  • 50 grams flaked coconut
  • 2 tablespoons chopped fresh mint
  • 50 grams chopped strawberries
  • 100 grams chopped pineapple
