Preparation Method :

  • Topping: Combine the chopped almonds, sugar and cinnamon.
  • Place cinnamon stick and milk in a saucepan over a medium heat and bring to the boil.
  • Remove pan from heat and stand for 10 minutes, then remove cinnamon stick.
  • Stir in sugar, return pan to a medium heat and cook, stirring, until sugar dissolves. Remove pan from heat.
  • Place egg yolks in a bowl and whisk to combine.
  • Whisk a little of the hot milk mixture into egg yolks, then whisk egg yolk mixture back into hot milk.
  • Cook, stirring continuously, until the mixture thickens. Remove from heat.
  • Stir in the pureed mango and almond meal. Divide the mixture between heatproof serving bowls and chill until set.
  • Sprinkle the topping over puddings and serve.


  • 3 mangoes, flesh pureed and strained
  • 75 grams almond meal
  • 1.5 litres milk
  • 500 grams sugar
  • 4 eggs yolks
  • 1 cinnamon stick  

Almond Cinnamon Topping

  • 1 tablespoon ground cinnamon
  • 50 grams chopped blanched almonds
  • 2 tablespoons sugar
