Preparation Method :

  • If using dried black beans soak the beans overnight, and then drain. Put into a saucepan, cover with water, and bring to the boil. Boil for 10 minutes, then reduce the heat and simmer for 1 ½ hours, or until tender. Drain well.
  • Spread the beans in a shallow ovenproof dish, and then scatter the cheese over the top. Sprinkle with cumin to taste.
  • Bake in a preheated oven, 190°C/375°F/ Gas Mark 5, for 10-15 minutes, or until the beans are cooked through and the cheese is bubbly and melted.
  • Remove from the oven and spoon the soured cream on top. Add the chilies, if using, and sprinkle with coriander and lettuce.
  • Arrange the tortilla chips around the beans, placing them in the mixture.
  • Serve the nachos at once.


  • 250 grams dried black beans, or canned black beans, drained 
  • 250 grams grated cheese, such as Cheddar, fontina, romano, Asia go or a combination 
  • 1/4 teaspoon cumin seeds or ground cumin
  • 4 tablespoon soured cream 
  • Thinly sliced pickled jalapeño chilies (optional) 
  • 1 tablespoon chopped fresh coriander
  • Handful of shredded lettuce tortilla chips, to serve
