Preparation Method :

  • Place chicken, onion, garlic, coriander stalks and water in a saucepan over a low heat, bring to simmer for about 10 - 15 minutes.
  • Remove chicken from liquid. Strain cooking liquid and discard solids. Reserve liquid for sauce.
  • Sauce: Place the tomatillos, chillies, coriander leaves, onion and garlic in a food processor and process until smooth.
  • Heat a frying pan over a medium heat, add pumpkin seeds and cook, stirring, for 5 minutes or until seeds pop and are golden.
  • Place pumpkin seeds (pepitas) and peanuts in a clean food processor and process to make a smooth paste.
  • Drop the nut paste to frying pan and cook, stirring, for 3 - 5 minutes or until golden.
  • Gradually stir in tomatillo mixture and the reserved cooking liquid, simmer to low flame, stirring frequently, for about 10 minutes.
  • Add chicken to sauce and simmer for 5 - 7 minutes or until heated through.


  • 2 stalks fresh coriander
  • 750 grams boneless chicken breast fillets

  • 2 cloves garlic  
  • 1 litre water
  • Pumpkin Seed Sauce
  • 50 grams green pumpkin seeds  
  • 50 grams unsalted peanuts
  • 900 grams tomatillos, drained
  • 12 serrano chillies
  • ½ bunch fresh coriander
  • ¼ onion, chopped
  • 1 clove garlic
