CHORIZO & CHEESE QUESADILLAS

Preparation Time :
30 minutes

Preparation Method :

  • Place the cheeses, chorizo, spring onions, chilies and salt and pepper to taste in a bowl and mix together.
  • Divide the mixture between 4 flour tortillas, and then top with the remaining tortillas.
  • Brush a large, non-stick or heavy-based frying pan with oil and heat over medium heat. Add 1 quesadilla and cook, pressing it down with a spatula, for 4-5 minutes, or until the underside is crisp and lightly browned. Turn over and cook the other side until the cheese is melting. Remove from the pan and keep warm. Cook the remaining quesadillas individually.
  • Cut each quesadilla into quarters, arrange on a warmed serving plate and serve, garnished with lime wedges.

INGREDIENTS

  • 150 grams mozzarella cheese, grated
  • 150 grams Cheddar cheese, grated 
  • 250 grams cooked chorizo sausage, outer casing removed, or ham, diced 
  • 4 spring onions, finely chopped 
  • 2 fresh green chilies, such as poblano, deseeded and finely chopped
  • Salt and pepper
  • 8 flour tortillas 
  • Cooking oil, for brushing lime wedges, to garnish
