Preparation Method :

  • Place the parsley, onion, spinach, coriander, chillies, garlic with ½ cup stock in a food processor or blender and process to make a puree.
  • Place the remaining stock in a saucepan over a medium heat, bring to the boil, then reduce heat and keep warm.
  • Heat oil in a separate saucepan over a medium heat, add rice and cook stirring for about 2 - 3 minutes or until rice is opaque.
  • Stir in the herb puree and hot stock, cover and simmer for 20 minutes or until rice is tender.


  • 250 grams white rice
  • 1 onion, quartered and roasted
  • 9 spinach leaves
  • 50 grams chopped fresh flat leaf parsley
  • 2 cloves garlic, roasted
  • 750 ml chicken stock
  • 3 tablespoons chopped fresh coriander
  • 2 mild fresh green chillies, seeded and chopped
  • 1 tablespoon Cooking oil
