Preparation Method :

  • Salsa: Mix pineapple, red pepper, chillies, coriander, mint and lime juice in a bowl, toss to combine, allow to stand for 20 - 25 minutes.
  • Brush scallops with oil and cook on a preheated hot char-grill or griddle for 20 - 30 seconds each side or until they just change colour.
  • Serve immediately with salsa and tortilla chips.


  • 30 scallops
  • Chilli or lime oil
  • Crisp tortilla chips
  • Pineapple Salsa
  • 1 tablespoon fresh coriander leaves
  • 1 tablespoon fresh mint leaves
  • 1 tablespoon lime juice
  • 100 grams chopped pineapple
  • ¼ red pepper, finely chopped
  • 2 medium green chillies, chopped
