MEXICAN RED RICE

Preparation Time :
20 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Heat oil in a deep frying pan over a medium heat, add onion and garlic and cook, stirring, at least for 5 minutes or until golden and soft.
  • Add the soaked rice and cook, stirring, for about a minute.
  • Stir in the chillies, oregano, stock, tomato puree and bring to the boil. Adjust seasoning with pepper and salt.
  • Reduce heat, cover and simmer for about 20 - 22 minutes or until rice is tender.
  • Serve rice with grilled meats or chicken, tortillas and salsas.

INGREDIENTS

  • 200 ml tomato puree  
  • 400 grams long grain white rice, soaked and drained
  • 2 tablespoons Cooking oil
  • 4 fresh green chillies
  • 1 tablespoon chopped fresh oregano
  • 1 litre chicken stock
  • 1 onion, chopped
  • 2 cloves garlic, crushed  
  • Freshly ground black pepper and salt, to taste
