POTATOES IN CHILLI VINEGAR

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Dressing: Mix all the ingredients in a large mixing bowl, toss to combine.
  • Place potatoes in a saucepan of boiling water and cook until tender. Drain and place in a serving bowl.
  • Pour dressing over warm potatoes, toss to combine and allow to stand at room temperature for an hour or two before serving.

INGREDIENTS

  • 1½ kgs baby new potatoes, halved

Chilli Vinegar Dressing

  • 2 red onions, sliced
  • 3 jalapeno chillies, chopped
  • 250 ml apple cider vinegar
  • 3 fresh red chillies, seeded and chopped
  • 2 cloves garlic, crushed
  • 2 tablespoons sugar
  • 2 teaspoons fresh oregano leaves
  • 4 fresh or dried bay leaves
  • 100 ml water
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh thyme leaves
