Preparation Method :

  • Dressing: Place coriander, lime juice, oil and black pepper to taste in a bowl and whisk to combine.
  • Place chickpeas and black and pinto beans in a bowl and toss to combine.
  • Boil, steam or microwave green beans until just tender, drain and refresh under cold running water.
  • Add cooked fresh beans, tomatoes, chillies and onion to bowl and toss to combine.
  • Drizzle dressing over salad and allow to stand for about 20 - 30 minutes before serving.


  • 250 grams green beans
  • 50 grams tomatoes, diced
  • 3 mild fresh red chillies, cut into strips
  • ½ onion, very thinly sliced
  • Cooked or canned chickpeas, black beans and pinto beans each 150 grams
  • Coriander and Lime Dressing
  • 2 tablespoons chopped fresh coriander
  • 2 tablespoons Cooking oil
  • 50 ml lime juice  
  • Freshly ground black pepper and Salt, to taste
