Preparation Method :

  • Dressing: Place the pine nuts, bay leaves, chillies, sugar, vinegar and oil in a bowl and whisk to combine.
  • Arrange rocket, flowers and radicchio on serving plates. Top with grapefruit and chicken.
  • Drizzle dressing over salad while serving.


  • 1 bunch young rocket edible flowers
  • 5 radicchio leaves, shredded
  • 1 grapefruit, peeled, all white pith removed, segramsented
  • 2 smoked chicken breasts, sliced

Pine Nut and Chilli Dressing

  • 100 ml red wine vinegar
  • 50 ml Cooking oil
  • 4 tablespoons pine nuts, toasted
  • 6 bay leaves
  • 2 fresh red chillies, finely chopped
  • 2 tablespoons sugar
