Preparation Method :

  • Dressing: Mix the spring onions with the chillies, olive oil, vinegar and lime juice in a bowl and whisk to combine.
  • Mix all the ingredients in a large mixing bowl, toss to combine. Transfer the mixture to a baking dish and bake for about 20 - 30 minutes or until the vegetables turns soft.
  • Place vegetables on a serving platter, scatter with feta cheese and drizzle with dressing.


  • 150 grams feta cheese, crumbled
  • 300 grams yellow or green patty pan squash
  • 100 grams carrots, peeled and halved
  • 1 kg butternut pumpkin, peeled and chopped
  • 2 teaspoons finely grated lime rind
  • 1 tablespoon Cooking oil
  • Freshly ground black pepper and salt, to taste

Green Onion Dressing

  • 75 ml Cooking oil
  • 50 ml apple cider vinegar
  • 2 tablespoons lime juice
  • 12 spring onions, sliced
  • 3 mild fresh green chillies, sliced
