ENCHILADA SAUCE

Makes :
500 ml

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Place tomatillos, onion, chilli, garlic and coriander in a food processor and process until smooth.
  • Transfer the mixture to a saucepan, simmer over a low heat. Stir in stock and simmer for 10 minutes or until sauce thickens. Stir in lime juice to taste.

INGREDIENTS

  • 500 grams canned tomatillos, drained and chopped
  • 250 ml chicken or vegetable stock
  • 2 tablespoons fresh coriander leaves  
  • 1 white onion, chopped
  • 1 hot fresh green chilli, seeded and chopped
  • 1 clove garlic, crushed
  • Lime juice
