Preparation Method :

  • Pre heat the oven temperature to 160°C / 320°F.
  • Cook tomatoes in a hot dry frying pan until skins are blistered and charred. Cool slightly and peel.
  • Place pumpkin seeds in a baking dish and bake for about 5 - 7 minutes or until seeds are toasted.
  • Place the pumpkin seeds (pepitas) and water in a food processor and process to make a rough paste.
  • Add tomatoes, chillies and coriander with the machine running and process to combine.


  • 50 grams tomatoes
  • 3 medium fresh green chillies, chopped
  • 4 tablespoons green pumpkin seeds  
  • 2 tablespoons water
  • 2 tablespoons chopped fresh coriander
