Preparation Method :

  • Heat the oil in a heavy-based frying pan over medium heat. Stir-fry onions for about 2 - 3 minutes. Simmer to low flame and add potatoes.
  • Cover and cook for about 20 minutes or until the potatoes are soft, stirring occasionally.
  • Stir in chorizo sausages and cook for 3 - 5 minutes. Beat the eggs together with salt, pepper and parsley.
  • Pour eggs over potato and sausage mixture in frying pan. Cover and cook for about 12 - 15 minutes or until eggs are set.
  • Invert tortilla onto a warmed serving plate. Garnish with parsley. Cut into wedges to serve.


  • 550 grams potatoes, peeled and cut into small cubes
  • 100 grams onions, peeled and sliced
  • 150 grams chorizo sausages, cut into small cubes
  • 6 eggs
  • 50 ml Cooking oil
  • 2 tablespoonS finely chopped parsley
  • Ground black pepper and salt to taste
  • Parsley, to Garnish
