Preparation Method :

  • Place tomatoes, onion and garlic in a food processor or blender and process until smooth.
  • Place tomato mixture in a saucepan and cook over a medium heat, stirring, for 5 minutes. Stir in stock and oregano, simmer to low flame for 15 minutes.
  • Heat oil in a frying pan over a high heat and cook tortilla strips until golden and crisp. Drain on absorbent kitchen paper.
  • Cook chillies in oil for 1 minute or until crisp. Drain on absorbent kitchen paper.
  • Ladle soup into warm bowls, then top with tortilla strips, chillies, avocado and a spoonful of cream, serve hot.


  • 100 ml double cream  
  • 3 ripe tomatoes, roasted and peeled
  • 1 onion, roasted, peeled and quartered
  • 3 cloves garlic, roasted and peeled
  • 1.5 litres chicken stock
  • 1 tablespoon chopped oregano
  • Cooking oil for shallow-frying
  • 10 a day - old corn tortillas, cut into thin strips
  • 2 dried pasilla chillies, cut into strips
  • 150 grams avocado, chopped
