Preparation Method :

  • Remove the stalk and outer leaves of each artichoke and drop the hearts into a bowl of cold water acidulated with a few drops of the lemon juice.
  • Place the hearts in a heavy pan with 400 ml water, half the quantities of lemon juice and olive oil and the garlic.
  • Season with salt and pepper, then boil. Simmer uncovered about 30 minutes until the hearts are tender.
  • Remove the hearts from the liquid and cool.
  • Mix the rest of the oil and lemon juice with half the remaining liquid, add more seasoning to taste.
  • Pour over the hearts and chill. Serve cold.


  • 6 small fresh artichokes
  • 5 tablespoons lemon juice
  • 2 cloves garlic, halved
  • 5 tablespoons Olive oil
  • Salt and pepper
