BRAINS IN LEMON AND OLIVE OIL DRESSING

Preparation Method :

  • Clean thoroughly Brain membranes. Put the brains in a pan, add water, the vinegar, Jemon and onion slices, and a pinch of salt.
  • Cover and simmer for 15 - 16 minutes on a low heat. Do not cook too vigorously or the brains will break. Leave to cool, then drain.
  • Now cut the brains into quarters. Blend the lemon juice, oil, parsley, garlic and seasonings to taste and pour over the brains.
  • Serve it with lemon chilled wedges and garnish of parsley.

INGREDIENTS

  • 4 sets lambs' brains
  • 4 tablespoons vinegar
  • ½ lemon, sliced
  • ½ onion, sliced
  • Salt and white pepper, to taste
  • Juice of 2 lemons
  • 4 tablespoons Cooking oil
  • 2 tablespoons finely chopped parsley
  • ½ clove garlic, crushed
