Preparation Method :

  • Soak the liver for 30 minutes in cold, salted water. Remove pat it dry on kitchen paper and then cut the slices into thin strips.
  • Rub the salt, pepper and garlic into the liver strips, then sprinkle it with paprika.
  • Heat the butter, add lemon juice and toss the liver in it over a high heat for about 1 minute each side.
  • Remove to a dish and then serve it immediately, garnished with the parsley.


  • 250 grams lambs or calves liver
  • Salt and pepper
  • 1 clove garlic, crushed
  • Pinch of paprika
  • 2 tablespoons butter
  • 3 tablespoons lemon juice
  • Parsley, to garnish
