Preparation Method :

  • Mix the tahini, yogurt, salt and fresh mint in a small bowl and set aside.
  • Marinate the onion, zucchini, carrot and capsicum in a mixture of   oil, lemon juice, mixed herbs, chilli flakes and salt for about fifteen minutes.
  • Grill the vegetables on a hot grill till the grill marks are seen on the pieces. Remove and divide into four portions.
  • To assemble the rolls, spread the tahini mixture on each roti, top with a portion of vegetables, sprinkle with parsley and roll up tightly.
  • Serve immediately.



  • 6 whole wheat roti
  • 3 teaspoons tahini
  • 200 grams yogurt
  • 10 fresh mint, roughly torn
  • 2 medium onion, quartered
  • 1 medium zucchini, sliced
  • 2 medium carrot, sliced
  • 2 medium green capsicum, cut into thick strips
  • 4 teaspoons lemon juice
  • 2 teaspoon mixed dried herbs
  • 2 teaspoons red chilli flakes
  • A few sprigs of fresh parsley, chopped
  • Salt to taste
  • 5 tablespoons Cooking oil
