Preparation Method :

  • Prick the peppers all over so that they will absorb the marinade.
  • Pack tightly together in a large glass jar with the chilli.
  • Add salt, water and vinegar, ensuring that there is no air trapped between the peppers.
  • Seal and store for three weeks by which time the peppers will have softened. Remove the amount required, drain and serve.


  • 450 grams long mild Chilli peppers
  • 1 small dried chilli
  • 1½ tablespoons salt
  • 300 ml water
  • 120 ml white wine
  • Vinegar
