Preparation Method :

  • Crush the cardamom pods using a pestle and mortar, then scoop out the pieces of shell.
  • Add the mustard seeds and cumin seeds and crush until fairly finely ground Stir in the salt.
  • Line a grill rack with foil and lightly toast the bread on one side.
  • Turn the slices over and scatter with the raisins and a sprinkling of the spice mix.
  • Lay the mozzarella slices over the bread and sprinkle with the remaining spice mix.
  • Cut the pear into 8 wedges, discarding the core, and place the wedges over the cheese.
  • Drizzle with oil.Cook under a preheated grill for 2-3 minutes until hot.
  • Transfer to small plates and drizzle with the remaining oil.


  • 20 cardamom pods
