PEPPER AND TOMATO FRITO WITH QUAILS' EGGS

Preparation Time :
30 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Slice the peppers as thinly as possible.
  • Heat the oil in a large saucepan or frying pan and fry the onion for 5 minutes until softened.
  • Add the peppers and fry for a further 10 minutes or until beginning to brown.
  • Add the garlic, tomatoes, tomato paste, sage and capers and cover with a lid.
  • Cook very gently, stirring occasionally, for about 10 minutes until the mixture is soft and pulpy.
  • Heat another tablespoon of the oil in a small frying pan. Break the eggs into the pan and fry gently until set.
  • Stir the remaining oil into the pepper mixture, season to taste with salt and pepper and spoon into small, warmed dishes.
  • Slide a fried egg on top of each dish to serve.

INGREDIENTS

  • 5 red peppers, cored and deseeded
  • 4 tablespoons Cooking oil
  • 2 red onion, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 500 grams tomatoes, skinned and roughly chopped
  • 4 tablespoons sun-dried tomato paste
  • 2 tablespoons chopped sage
  • 2 tablespoons capers, rinsed and drained
  • 10 quails' eggs
  • Salt and pepper
