Preparation Method :

  • Check the fish for any stray bones, then cut the flesh into 1 inch pieces.
  • Mix the flour in a bowl with the cheese, capers, parsley and salt and pepper and make a well in the centre.
  • Add the oil, egg yolk and water. Whisk the liquids together, gradually incorporating the flour to make a paste.
  • Whisk the egg white until peaking and fold it into the batter using a large metal spoon so the batter is lightened and aerated.
  • Heat oil to a depth of 2 inch in a large saucepan until a drop of the batter sizzles and turns golden in about 30 seconds.
  • Dip the pieces of fish in the batter then lower carefully into the oil, cooking about 10 pieces at a time, until puffed and golden.
  • Drain on kitchen paper and keep warm while you cook the remaining fritters.
  • Serve with Aioli or Fresh Herb Oil.


  • 500 grams skinned hake fillets
  • 200 grams plain flour
  • 100 grams Manchego cheese, grated
  • 4 tablespoons capers, chopped
  • 4 tablespoons chopped parsley
  • 4 tablespoons Cooking oil
  • 2 egg, separated
  • Cooking oil for frying
  • Salt and pepper
