Preparation Method :

  • Mash the tomatoes against the side of a bowl or finely chop them if they are slightly firmer.
  • Lightly toast the bread on both sides and rub it with the cut side of the garlic clove while the bread is still hot.
  • Pile the tomatoes on top and drizzle with the oil.
  • Crumple the Serrano ham over the tomatoes.
  • Serve seasoned with black pepper. 


  • 8 small, very ripe tomatoes, skinned
  • 8 thin slices of rustic white bread
  • 2 garlic clove, halved
  • 8 teaspoons Cooking oil
  • 8 slices of Serrano ham
  • Pepper
