GAZPACHO

30 minutes

Preparation Method :

  • Put the tomatoes, cucumber and pepper in a bowl.
  • Tear the bread into pieces and add it to the bowl with the garlic, onion and vinegar.
  • Blend the ingredients, in batches, in a food processor until completely smooth, scraping the mixture clown from the sides of the bowl.
  • Pour the soup into a clean bowl, whisk in the oil and season to taste with salt and pepper.
  • If the soup is very thick, whisk in a little cold water.
  • Cover and chill for at least an hour before serving.
  • Serve in small cups or glasses.

INGREDIENTS

  • 1 kg well-flavoured tomatoes, skinned and roughly chopped
  • 2 cucumber, skinned and roughly chopped
  • 2 red pepper, cored, deseeded and roughly chopped
  • 100 grams white bread, crusts removed
  • 2 garlic cloves, chopped
  • 1 small red onion, roughly chopped 
  • 4 tablespoons wine or sherry vinegar 
  • 8 tablespoons Cooking oil 
  • Salt and pepper
