Preparation Method :

  • Cut off the fish heads, slit open the undersides and gut the fish.
  • Pull away the backbones and rinse the fish under cold running water.
  • Arrange the anchovies in a non-metallic dish and cover with the vinegar. Cover and chill overnight.
  • Mix together the garlic, parsley, oil and salt and pepper.
  • Drain the vinegar from the anchovies and add the garlic mixture.
  • Cover and chill for several hours or overnight before serving.


  • 500 grams fresh anchovies
  • 200 ml white wine vinegar
  • 4 garlic cloves, crushed
  • 4 tablespoons finely chopped parsley
  • 200 ml Cooking oil
  • Salt and pepper
