Preparation Method :

  • Pat dry the chicken with absorbent kitchen paper and season well with black pepper.
  • Place in a baking dish and drizzle with the oil.
  • Preheat oven to 220°C / 425°F. Bake the chicken, uncovered, for about 20 minutes or until cooked.
  • Remove chicken and place on a warm serving dish, spoon over melted butter, set aside and keep warm.
  • Drain excess fat from baking dish and add tomatoes and olives.
  • Return pan to the oven and bake for 5 minutes or until tomatoes are hot.
  • Arrange the tomatoes and olives around the chicken and drizzle over any juices remaining in the pan.
  • Serve with steamed new potatoes or crusty bread.


  • 2 tablespoon cooking oil    
  • 500 grams chicken breast halves
  • 100 grams tomatoes, peeled, seeded and quartered
  • Freshly ground black pepper
  • 1 tablespoon butter, melted
  • Green and black olives, 8 each
